Windows 7 Professional is still in service on more machines than most people would guess, and the reasons are always the same three. There is a machine tool, a scanner, a plotter or a lab instrument whose driver was never rewritten. There is a licence bound application that checks the operating system version and refuses to move. Or there is a workstation whose only job is one task, and nobody sees a reason to disturb it.
This image is the final SP1 branch with the convenience rollup already integrated, which is the part that matters in practice. A clean SP1 install without it spends hours crawling through the update check before it finds anything, and on some hardware it never finishes at all. With the rollup folded in, the machine is usable within the hour and the remaining patch set is small.
Professional rather than Home Premium gives you the things a working machine needs: domain join, Group Policy, Remote Desktop as a host rather than only a client, Encrypting File System, backup to a network location, and XP Mode support on hardware that has the virtualisation extensions. The image is multilingual, so the language is chosen during setup instead of being fixed in the file.
USB 3 and NVMe support are the two things people trip over on newer boards. The relevant drivers are integrated into both the boot image and the install image, so setup sees a modern storage controller and keeps your keyboard and mouse alive on a board with no legacy ports. The image comes up already licensed with nothing to run afterwards.
